Legislation
Simply put, operating an effective means of grease removal like ecobug® grease degrading dosing equipment solution or fitting a grease trap is a statutory requirement in the UK under Part H of the British building Regulations.
Part H states under item 2.21 - "Drainage serving kitchens in commercial hot food premises should be fitted with a grease separator complying with BS EN 1825-1: 2004 and designed in accordance with BS EN 1825-2:2002 or other effective means of grease removal."

ecobug® Peristaltic Pump
As most of the FOG's comes from dishwashers and sinks you need to put the ecobug® setup up stream of these - see downloadable instructions. The peristaltic pump is a positive displacement pump, used to inject ecobug® grease degrader in an ongoing dosage when attached to the furthest sink unit from the mains drainage. The process is called peristalsis and used in many biological medical systems. (a flexible 9mm tube fitted inside a circular pump casing, this inhibits any contamination before entering the sink unit drainage system.
An average commercial kitchen sink unit will use daily a 160ml of ecobug® grease degrader ongoing dosage, which provides circa 4 months of operational use from a 20 litre container.
